Description

These soft and chewy healthy oatmeal cookies are packed with wholesome ingredients like oats, honey, coconut oil, nuts, raisins, and chocolate chips. They offer a nutritious and delicious snack or breakfast option that’s easy and quick to prepare, perfect for those seeking a healthier sweet treat.

Ingredients

Wet Ingredients

  • 1/3 cup honey or maple syrup (use 1/2 cup for sweeter cookies)
  • 1/4 cup coconut oil or unsalted butter, melted
  • 1 large egg
  • 1 tsp vanilla extract

Dry Ingredients

  • 1 cup instant oats
  • 1/2 cup whole wheat flour (or all-purpose flour)
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/4 tsp salt

Add-ins

  • 1/4 cup chocolate chips (optional)
  • 1/4 cup raisins

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper, foil, or a silicone baking mat and set aside to prepare for baking.
  2. Mix Wet Ingredients: In a large bowl, whisk together the honey, melted coconut oil (or butter), egg, and vanilla extract until fully combined and smooth.
  3. Combine Dry Ingredients: In a medium bowl, whisk together the instant oats, whole wheat flour, baking powder, cinnamon, and salt to evenly distribute all the dry components.
  4. Mix Wet and Dry: Stir the dry ingredients into the wet ingredient mixture until just combined. Then gently fold in the chocolate chips and raisins, making sure they are evenly dispersed throughout the dough.
  5. Shape Cookies: Using a medium-large cookie scoop, drop spoonfuls of the dough onto the prepared baking sheet. Flatten each cookie slightly to about ¾ inch thickness for even baking.
  6. Bake: Place the baking sheet in the preheated oven and bake for 10 minutes, or until edges are golden and centers look set but still soft.
  7. Cool: Remove the cookies from the oven and allow them to cool on the pan for at least 5 to 10 minutes before transferring to a wire rack or serving. This helps them set and enhances their chewy texture.

Notes

  • You can substitute maple syrup for honey to make it vegan-friendly.
  • Use unsalted butter instead of coconut oil for a different flavor profile.
  • For a gluten-free version, replace whole wheat flour with a gluten-free flour blend.
  • Adjust sweetness by increasing honey or maple syrup quantity if desired.
  • Make sure not to overbake to keep cookies soft and chewy.
