Ingredients
Wet Ingredients
- 1/3 cup honey or maple syrup (use 1/2 cup for sweeter cookies)
- 1/4 cup coconut oil or unsalted butter, melted
- 1 large egg
- 1 tsp vanilla extract
Dry Ingredients
- 1 cup instant oats
- 1/2 cup whole wheat flour (or all-purpose flour)
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/4 tsp salt
Add-ins
- 1/4 cup chocolate chips (optional)
- 1/4 cup raisins
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper, foil, or a silicone baking mat and set aside to prepare for baking.
- Mix Wet Ingredients: In a large bowl, whisk together the honey, melted coconut oil (or butter), egg, and vanilla extract until fully combined and smooth.
- Combine Dry Ingredients: In a medium bowl, whisk together the instant oats, whole wheat flour, baking powder, cinnamon, and salt to evenly distribute all the dry components.
- Mix Wet and Dry: Stir the dry ingredients into the wet ingredient mixture until just combined. Then gently fold in the chocolate chips and raisins, making sure they are evenly dispersed throughout the dough.
- Shape Cookies: Using a medium-large cookie scoop, drop spoonfuls of the dough onto the prepared baking sheet. Flatten each cookie slightly to about ¾ inch thickness for even baking.
- Bake: Place the baking sheet in the preheated oven and bake for 10 minutes, or until edges are golden and centers look set but still soft.
- Cool: Remove the cookies from the oven and allow them to cool on the pan for at least 5 to 10 minutes before transferring to a wire rack or serving. This helps them set and enhances their chewy texture.
Notes
- You can substitute maple syrup for honey to make it vegan-friendly.
- Use unsalted butter instead of coconut oil for a different flavor profile.
- For a gluten-free version, replace whole wheat flour with a gluten-free flour blend.
- Adjust sweetness by increasing honey or maple syrup quantity if desired.
- Make sure not to overbake to keep cookies soft and chewy.
