Description

This baked salmon recipe is a simple and delicious way to enjoy tender, flaky salmon fillets infused with a fresh parsley and lemon marinade. Perfectly cooked in the oven, the salmon is juicy and flavorful, topped with lemon slices for an elegant touch. Ready in just 20 minutes, this dish makes a healthy and satisfying meal for any night of the week.

Ingredients

Salmon

  • 1 1/2 lb salmon fillet (cut into 4 filets)

Marinade

  • 2 Tbsp fresh parsley (finely chopped)
  • 2 Tbsp extra light olive oil (or vegetable oil)
  • 2 Tbsp fresh lemon juice
  • 3 garlic cloves (minced, pressed, or grated)
  • 1/2 Tbsp Dijon mustard
  • 1/2 tsp fine sea salt
  • 1/8 tsp black pepper (freshly cracked)

Garnish

  • 1/2 lemon (sliced into 4 rings for garnish)

Instructions

  1. Preheat the Oven: Set your oven to 450°F (232°C). Line a rimmed baking sheet with a silicone baking mat, parchment paper, or foil to prevent sticking and for easy cleanup.
  2. Prepare the Salmon: Arrange the salmon fillets on the prepared baking sheet, placing them skin-side down to protect the flesh during cooking and promote even heat distribution.
  3. Make the Marinade: In a small bowl, combine the finely chopped parsley, minced garlic, olive oil, fresh lemon juice, Dijon mustard, sea salt, and freshly cracked black pepper. Stir well until all ingredients are fully blended into a flavorful marinade.
  4. Apply the Marinade: Generously brush the marinade over the tops and sides of each salmon fillet, ensuring they’re well coated. Then, place a lemon slice on top of each piece for added aroma and presentation.
  5. Bake the Salmon: Place the baking sheet in the preheated oven and bake the salmon uncovered for 12 to 15 minutes. Check that the salmon is just cooked through, flaky, and has reached an internal temperature of 145°F (63°C) at the thickest portion using an instant-read thermometer to avoid overcooking.

Notes

  • Do not overcook the salmon to prevent it from drying out; it should be moist and flaky.
  • Use fresh lemon slices as garnish for added flavor and visual appeal.
  • You can substitute extra light olive oil with any neutral vegetable oil if preferred.
  • If you don’t have an instant-read thermometer, check doneness by gently flaking the salmon with a fork.
