Description

This Taco Casserole with Tortillas is a quick and flavorful Mexican-inspired dish perfect for a family dinner. Ground beef is seasoned and simmered with taco spices and salsa con queso, layered between soft tortillas and generous amounts of melted cheese, then baked to golden perfection. Serve it with a dollop of sour cream for added creaminess.

Ingredients

Meat and Seasoning

  • 1 lb. ground beef
  • 1 ½ tbsp taco seasoning mix
  • ½ cup water

Sauce

  • ½ cup salsa con queso

Base and Toppings

  • 3 8-inch flour tortillas or corn tortillas
  • 2 cups shredded Mexican cheese blend or cheddar cheese
  • Sour cream for serving

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the casserole.
  2. Brown the Beef: Heat a small amount of oil in a large skillet over medium-high heat. Add the ground beef and cook, stirring occasionally, until it is fully browned and no longer pink.
  3. Season the Meat: Stir in 1 ½ tablespoons of taco seasoning mix and ½ cup of water to the browned beef. Let it simmer for 2-3 minutes until the mixture thickens slightly, then mix in ½ cup of salsa con queso. Remove from heat once combined.
  4. Prepare Baking Dish: Spray an 8-inch round baking pan with cooking spray to prevent sticking.
  5. Layer the Casserole: Place one tortilla at the bottom of the pan. Spread one-third of the beef mixture evenly over the tortilla, then sprinkle one-third of the shredded cheese on top. Repeat this layering process two more times, finishing with cheese on top.
  6. Bake: Place the assembled casserole in the oven and bake for 20 minutes, or until the cheese is fully melted and bubbly.
  7. Cool and Serve: Allow the casserole to cool for a few minutes to set before slicing. Serve warm, topped with sour cream as desired.

Notes

  • You can substitute ground turkey or chicken for a leaner option.
  • Use corn tortillas for a gluten-free alternative.
  • Adding diced jalapeños or chopped onions to the beef mixture can enhance the flavor.
  • Leftovers keep well in the refrigerator for up to 3 days and reheat nicely in the oven or microwave.
