Instructions

  1. Mix Wet Ingredients: Place the leftover mashed sweet potatoes into a large bowl. Add the eggs, milk, brown sugar, and maple syrup. Whisk everything together until the mixture is smooth and fully combined.
  2. Add Dry Ingredients: Sprinkle the flour, cinnamon, baking powder, salt, and nutmeg over the sweet potato mixture. Stir gently but thoroughly until the batter is smooth and consistent. Then add the melted butter and mix again until incorporated.
  3. Cook the Pancakes: Heat a large nonstick skillet over medium heat and add a small pat of butter. Once melted and the skillet is hot, drop ⅓ cup portions of the batter onto the skillet.
