Ingredients
1 egg
1 cup Splenda or your favorite sugar substitute
1 teaspoon baking powder
1/2 teaspoon vanilla extract
1 cup creamy peanut butter
1 teaspoon water
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, beat together the egg, sugar substitute, baking powder, and vanilla extract for about 1 minute until smooth.
- Add the creamy peanut butter and water to the mixture, and beat until well combined. The mixture may be slightly dry, but make sure the peanut butter is well incorporated.
- Scoop out heaping teaspoonfuls of dough and place them on a baking tray lined with parchment paper or sprayed with non-stick cooking spray.
- Use a fork to press down on each cookie to create the classic peanut butter cookie pattern. Spray the fork with cooking spray to prevent sticking.
- Bake for 12-15 minutes, or until the cookies are firm and lightly browned around the edges.
- Let the cookies cool completely on a cooling rack.
