This copycat Subway Italian Herb and Cheese bread recipe produces soft, bakery-style sub rolls topped with a savory herb crust and melted cheese. Perfect for sandwiches or enjoying fresh from the oven.


Ingredients

3 cups warm water

4 Tbsp dry active yeast

¼ cup granulated sugar

⅓ cup vegetable or canola oil

1 Tbsp salt

2 eggs

⅓ cup instant mashed potato flakes (optional)

7½ cups bread flour

1 Tbsp dried oregano

2 Tbsp garlic powder

1 Tbsp dried parsley

2 Tbsp parmesan cheese (grated)

Shredded Colby and Monterey Jack cheese (for topping)


Instructions

  1. Mix warm water and yeast in stand mixer bowl. Let sit until foamy.
  2. Add sugar, oil, salt, eggs, and optional mashed potato flakes. Mix well.
  3. Add bread flour and knead on low for about 6 minutes until smooth dough forms.
  4. Cover and rest for 10 minutes.
  5. Divide into 8 equal pieces and shape into 12-inch logs.
  6. Spray tops lightly with water and coat in Italian herb blend.
  7. Place on silicone mats, score tops with shallow slashes, and let rise until tripled in size (up to 1 hour).
  8. Preheat oven to 375°F (190°C).
  9. Top each loaf with shredded cheese and bake 15–18 minutes until golden and bubbly.
  10. Cool completely before slicing and serving.
