This copycat Subway Italian Herb and Cheese bread recipe produces soft, bakery-style sub rolls topped with a savory herb crust and melted cheese. Perfect for sandwiches or enjoying fresh from the oven.
Ingredients
3 cups warm water
4 Tbsp dry active yeast
¼ cup granulated sugar
⅓ cup vegetable or canola oil
1 Tbsp salt
2 eggs
⅓ cup instant mashed potato flakes (optional)
7½ cups bread flour
1 Tbsp dried oregano
2 Tbsp garlic powder
1 Tbsp dried parsley
2 Tbsp parmesan cheese (grated)
Shredded Colby and Monterey Jack cheese (for topping)
Instructions
- Mix warm water and yeast in stand mixer bowl. Let sit until foamy.
- Add sugar, oil, salt, eggs, and optional mashed potato flakes. Mix well.
- Add bread flour and knead on low for about 6 minutes until smooth dough forms.
- Cover and rest for 10 minutes.
- Divide into 8 equal pieces and shape into 12-inch logs.
- Spray tops lightly with water and coat in Italian herb blend.
- Place on silicone mats, score tops with shallow slashes, and let rise until tripled in size (up to 1 hour).
- Preheat oven to 375°F (190°C).
- Top each loaf with shredded cheese and bake 15–18 minutes until golden and bubbly.
- Cool completely before slicing and serving.
