Description

A refreshing strawberry slushie made with frozen strawberries and your choice of kombucha or coconut water/apple juice, optionally topped with vegan Italian meringue for a stylish twist—perfect for warm days or summer brunches.


Ingredients

340 g frozen strawberries

250 ml kombucha or coconut water/apple juice

batch vegan Italian meringue (optional)


Instructions

  1. Prepare vegan Italian meringue, if using, following your preferred recipe and making ⅓ batch.
  2. Let frozen strawberries sit at room temperature for 10–15 minutes to slightly thaw.
  3. Add thawed strawberries and half of the chosen liquid into a high-speed blender. Blend for 2–3 minutes until smooth.
  4. Gradually add more liquid while blending until the desired slushie consistency is reached.
  5. Pour the slushie into glasses and serve immediately.
  6. Top with a dollop of vegan Italian meringue, if using.

Notes

  • Use sparkling water or iced herbal tea for a lighter base.
  • Add lemon or lime juice for a tart flavor boost.
  • Blend with frozen banana or coconut yogurt for creaminess.
