Instructions
- Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish with cooking spray to ensure the brownies don’t stick.
- Make Strawberry Cheesecake Filling: Add chopped strawberries to a blender and puree until smooth. In a stand mixer bowl, beat the softened cream cheese with ¼ cup sugar for 2-3 minutes until creamy and well combined. Add the strawberry puree and the single large egg, then continue beating until fully incorporated.
- Mix Dry Ingredients for Brownies: In a large bowl, whisk together the all-purpose flour, 1 cup sugar, cocoa powder, salt, baking powder, and instant coffee until evenly combined.
- Combine Wet Brownie Ingredients: In another bowl, whisk vegetable oil, 2 large eggs, and vanilla extract until smooth. Add this wet mixture to the dry ingredients, stirring until a smooth batter forms. Fold in the semisweet chocolate chips to complete the brownie batter.
- Prepare Batter Layers for Swirling: Remove ½ cup of the brownie batter and stir in 1 tablespoon of water until smooth.
