Description
Southwestern Goulash is a flavorful one-pot meal that combines elbow macaroni, ground beef, corn, tomatoes, and green chiles into a delicious, savory dish. It’s the perfect blend of comfort food with a southwestern twist, offering a satisfying and easy-to-make dinner for the whole family.
Ingredients
1 cup uncooked elbow macaroni
1 pound lean ground beef (90% lean)
1 medium onion, chopped
1 can (28 ounces) diced tomatoes, undrained
1 can (8 ounces) tomato sauce
2/3 cup frozen corn
1 can (4 ounces) chopped green chiles
1/2 teaspoon ground cumin
1/2 teaspoon pepper
1/4 teaspoon salt
1/4 cup minced fresh cilantro
Instructions
- Cook the macaroni according to the package directions. Drain and set aside.
- While the macaroni is cooking, heat a 6-quart stockpot over medium heat. Add the ground beef and chopped onion. Cook, crumbling the beef as it cooks, until the meat is no longer pink, about 6-8 minutes. Drain any excess fat.
- Stir in the diced tomatoes (with their juices), tomato sauce, frozen corn, chopped green chiles, cumin, pepper, and salt. Bring the mixture to a boil.
- Once boiling, reduce the heat and let it simmer, uncovered, for about 5 minutes until the flavors have blended.
- Add the drained macaroni to the pot and stir in the fresh cilantro. Mix well to combine and serve.
Notes
- Spicy Version: Add diced jalapeños or a few dashes of hot sauce to bring some heat to this dish.
- Vegetarian Option: Swap the ground beef for black beans or lentils for a vegetarian-friendly version.
- Cheesy: Sprinkle shredded cheese on top of the goulash before serving or stir in some cheese into the mixture for a creamy, cheesy variation.
