Description

Ingredients

1 cup uncooked elbow macaroni

1 pound lean ground beef (90% lean)

1 medium onion, chopped

1 can (28 ounces) diced tomatoes, undrained

1 can (8 ounces) tomato sauce

2/3 cup frozen corn

1 can (4 ounces) chopped green chiles

1/2 teaspoon ground cumin

1/2 teaspoon pepper

1/4 teaspoon salt

1/4 cup minced fresh cilantro


Instructions

  1. Cook the macaroni according to the package directions. Drain and set aside.
  2. While the macaroni is cooking, heat a 6-quart stockpot over medium heat. Add the ground beef and chopped onion. Cook, crumbling the beef as it cooks, until the meat is no longer pink, about 6-8 minutes. Drain any excess fat.
  3. Stir in the diced tomatoes (with their juices), tomato sauce, frozen corn, chopped green chiles, cumin, pepper, and salt. Bring the mixture to a boil.
  4. Once boiling, reduce the heat and let it simmer, uncovered, for about 5 minutes until the flavors have blended.
  5. Add the drained macaroni to the pot and stir in the fresh cilantro. Mix well to combine and serve.
