Ingredients
1 lb carrots, peeled and cut into thick rounds
1 tbsp olive oil
2 tbsp grated Parmesan cheese

Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Boil the carrot rounds in salted water for 8-10 minutes until fork tender. Drain well.
