Ingredients

Meat and Fats

  • 1 tbsp Unsalted butter
  • 1 tbsp Oil
  • 2 pounds Sirloin beef or Ribeye steak or Flank steak or Skirt steak, cut into thin strips

Liquids and Thickeners

  • 1/2 cup Low sodium beef broth
  • 1 tbsp Cornstarch

Vegetables and Aromatics

  • 1 can (14.5 oz) Diced tomatoes with green chiles
  • 1 cup Onion, sliced
  • 1-2 cups Green peppers, sliced
  • 1-2 tbsp Lime juice

Spices

  • 1 tbsp Chili powder
  • 1 tsp Cumin powder
  • 2 tsp Garlic powder
  • 1 tsp Onion powder
  • Salt, to taste
  • Pepper, to taste


Instructions

  1. Brown the beef: Heat butter and oil in a large nonstick pan over medium-high heat. Add the thin strips of beef and cook, stirring occasionally, until the meat is browned and no longer pink.
  2. Drain excess grease: Carefully drain about half of the grease from the pan, leaving the rest to maintain flavor.
  3. Transfer to slow cooker: Move the browned beef and remaining grease into a 6-quart or larger slow cooker.
  4. Prepare thickening mixture: In a small bowl, whisk together the low sodium beef broth and cornstarch until smooth and well combined.
  5. Add liquids and spices: Pour the broth and cornstarch mixture into the slow cooker. Add the diced tomatoes with green chiles, sliced onions, chili powder, cumin powder, garlic powder, onion powder, salt, and pepper. Stir everything until fully mixed.
  6. Cook on high: Cover the slow cooker and cook on high heat for 2 hours and 30 minutes, allowing the flavors to meld and the meat to become tender.
  7. Add green peppers: Uncover the slow cooker and gently stir in the sliced green peppers.
  8. Continue cooking: Cover again and cook on high heat for another 1 hour to soften the peppers and integrate the flavors.
  9. Finish with lime juice: Uncover and stir in fresh lime juice for a bright, tangy flavor boost.
