Description

This Slow Cooker Queso Chicken recipe is a flavorful and easy-to-make dish that combines tender chicken breasts with a creamy blend of queso dip, cream cheese, and salsa, all seasoned with taco spices and slow-cooked to perfection. Perfect for a comforting meal served over rice or in tacos, garnished with fresh cilantro.

Ingredients

Chicken and Seasoning

  • 2 pounds boneless skinless chicken breasts
  • 1 package taco seasoning (about 1 oz)

Sauce

  • ¾ cup chunky salsa
  • 1 ⅓ cups queso dip
  • 4 ounces cream cheese, cubed

Garnish

  • Chopped fresh cilantro, for serving

Instructions

  1. Load the crockpot. Add the chicken breasts, taco seasoning, salsa, queso dip, and cubed cream cheese to the slow cooker. Mix everything together well until the chicken is fully coated with the seasonings and sauces.
  2. Cook. Cover and cook on low heat for 6 hours, allowing the chicken to become tender and absorb the flavorful mixture.
  3. Shred. After cooking, use two forks to shred the chicken directly in the slow cooker, mixing it evenly with the sauce.
  4. Serve. Serve the queso chicken warm over cooked rice or inside taco shells, garnished with chopped fresh cilantro for a fresh finish.

Notes

  • For a spicier dish, use a hot salsa or add diced jalapeños.
  • You can substitute chicken thighs for breasts if preferred; they may need slightly less cooking time.
  • This recipe can be doubled easily for larger groups.
  • Leftover queso chicken can be refrigerated for up to 3 days or frozen for up to 2 months.
