- 2 cups shredded mozzarella cheese

Instructions
- Heat the oil: In a large skillet, heat 2 teaspoons of olive oil over medium heat to prepare for cooking the beef and onion.
- Cook ground beef and onion: Add 1 ½ pounds of lean ground beef and 1 medium diced sweet onion to the skillet. Cook until the onion starts to soften and the ground beef is no longer pink, stirring occasionally.
- Drain excess fat: Drain any excess liquid or fat from the skillet if desired to reduce greasiness.
- Add seasonings and garlic: Stir in 2 minced garlic cloves, 2 teaspoons homemade Italian seasoning, 2 teaspoons chopped fresh basil, ½ teaspoon salt, and ¼ teaspoon black pepper to flavor the meat mixture.
- Add sauces and liquid: Pour in 24 ounces of tomato sauce, 14.5 ounces diced tomatoes (with their juice), and 1 cup of water. Stir to combine all ingredients.
- Bring to a boil: Increase heat slightly and bring the mixture to a boil in the skillet.
- Add broken noodles: Stir in 8 ounces of broken regular lasagna noodles, ensuring they are submerged in the liquid.
- Simmer covered: Reduce heat to a simmer, cover the skillet with a lid, and let cook for 20-23 minutes until the noodles are tender. Stir occasionally to prevent sticking.
- Add ricotta cheese: Uncover the skillet and add spoonfuls of 8 ounces ricotta cheese around the skillet, but do not stir it in.
- Top with mozzarella: Sprinkle 2 cups shredded mozzarella cheese evenly over the top of the dish.
- Let cheese melt: Remove the skillet from heat and cover for 2 minutes to allow the mozzarella cheese to melt.
- Garnish and serve: Garnish with fresh parsley or basil. Serve the skillet lasagna warm for a comforting meal.
