Description

Shrimp Scampi Pasta Bake combines the bold flavors of garlic, shrimp, and lemon with creamy sauce and melted cheese. Perfect for a cozy dinner or special occasion, this comforting one-pan meal will be a hit with family and guests alike.

Ingredients

For the Pasta Bake:

12 oz linguine or spaghetti

1 lb large shrimp, peeled and deveined

4 tbsp butter

4 cloves garlic, minced

¼ tsp red pepper flakes

½ cup white wine or chicken broth

1 lemon, juiced and zested

1 cup heavy cream

½ cup grated Parmesan cheese

1 cup shredded mozzarella cheese

Salt and pepper to taste

2 tbsp chopped fresh parsley

Instructions

  1. Preheat the Oven:

    • Set your oven to 375°F (190°C) and lightly grease or line a 9×13-inch baking dish with parchment paper.

  2. Cook the Pasta:

    • Prepare the pasta according to the package instructions until al dente. Drain and set aside.

  3. Sauté Aromatics:

    • In a large skillet, melt butter over medium heat. Add the minced garlic and red pepper flakes, sautéing for 1 minute until fragrant.

  4. Cook the Shrimp:

    • Add the shrimp to the skillet and cook for 3-4 minutes, until pink and opaque. Remove from the skillet and set aside.

  5. Prepare the Sauce:

    • Pour white wine (or chicken broth) into the skillet, scraping up any browned bits from the bottom. Simmer for 2 minutes to reduce slightly.

    • Stir in lemon juice, lemon zest, and heavy cream. Bring to a simmer for 2-3 minutes, allowing the sauce to thicken. Season with salt and pepper to taste.

  6. Toss the Pasta:

    • Add the cooked pasta to the skillet and toss to coat in the creamy sauce.

  7. Assemble the Dish:

    • Transfer the pasta mixture into the prepared baking dish. Arrange the cooked shrimp on top of the pasta.

  8. Add Cheese:

    • Sprinkle grated Parmesan and shredded mozzarella evenly over the top.

  9. Bake:

    • Bake for 15-20 minutes until the cheese is melted, bubbly, and slightly golden.

  10. Garnish and Serve:

  • Remove from the oven, sprinkle with fresh parsley, and serve immediately for a satisfying, flavorful meal.

Notes

For extra heat, add more red pepper flakes or a dash of hot sauce.

You can substitute half-and-half or milk for a lighter version of the sauce, but the result will be less creamy.
