Description

Deliciously seasoned and crispy baked chicken drumsticks with a flavorful blend of garlic, chili, oregano, paprika, and pepper. This recipe delivers golden, juicy drumsticks with a perfect crispy skin, baked to perfection using simple pantry spices and olive oil.

Ingredients

Chicken

  • 3 packs pasture-raised chicken drumsticks (about 13-15 drumsticks)

Seasoning & Oil

  • 3-4 tablespoons extra virgin olive oil
  • 2 teaspoons sea salt
  • 2 teaspoons garlic powder
  • 2 teaspoons chili powder
  • 2 teaspoons oregano
  • 1 teaspoon paprika
  • 1 teaspoon ground pepper

Instructions

  1. Preheat Oven: Set your oven to 420°F (215°C) to ensure it is hot and ready for the chicken drumsticks to bake at high heat for crispy skin.
  2. Prepare Chicken: Pat the drumsticks dry thoroughly with paper towels to remove excess moisture. This step is essential for achieving crispiness during baking.
  3. Season Drumsticks: Place the drumsticks in a large bowl, ensuring the chicken skin lies flat over the drumstick and is not folded. Drizzle with olive oil and sprinkle on the sea salt, garlic powder, chili powder, oregano, paprika, and ground pepper. Toss everything together until the drumsticks are evenly and fully coated with the oil and seasoning mixture.
  4. Prepare Baking Sheet: Spray a baking sheet and a wire rack with cooking oil. Place the wire rack over the baking sheet. The rack will allow hot air to circulate around the chicken, ensuring even cooking and crispiness.
  5. Bake Drumsticks: Arrange the seasoned drumsticks evenly on the rack without overcrowding. Bake in the preheated oven for 35 minutes. Then carefully flip each drumstick over and continue baking for an additional 15 minutes until the skin is golden brown and crispy.
  6. Serve and Store: Once done, serve the crispy drumsticks hot and enjoy. Store any leftovers in an airtight container in the refrigerator for up to 3 to 4 days.

Notes

  • For extra crispy skin, ensure the chicken is patted very dry before oiling and seasoning.
  • You can adjust the chili powder amount based on your preferred spice level.
  • Using a wire rack over the baking sheet helps the heat circulate evenly and prevents soggy bottoms.
  • Leftover drumsticks can be reheated in the oven or air fryer to regain crispiness.
  • This recipe works well with organic or pasture-raised chicken for better flavor and texture.
