Description

Roasted Cauliflower With Tahini Ranch features golden, crispy cauliflower florets drizzled with a creamy, herby tahini ranch dressing. This dish blends earthy, nutty, and tangy flavors, making it perfect for everyday meals or special occasions.


Ingredients

Tahini Ranch

3/4 cup whole-milk Greek yogurt

3/4 cup buttermilk

1/4 cup tahini

2 tbsp lemon juice

1/4 cup minced fresh dill

1/4 cup minced fresh chives

1 tsp onion powder

1 tsp garlic powder

1 garlic clove, finely grated

Kosher salt, to taste

Cauliflower

2 medium heads cauliflower, broken into florets

1/2 cup extra-virgin olive oil

1 tsp Aleppo pepper

Kosher salt, to taste

Freshly chopped dill and chives, for garnish


Instructions

  1. In a medium bowl, whisk together Greek yogurt, buttermilk, tahini, lemon juice, dill, chives, onion powder, garlic powder, grated garlic, and salt until smooth. Set aside.
  2. Preheat oven to 450°F (230°C). On a large sheet pan, toss cauliflower florets with olive oil, Aleppo pepper, and salt until evenly coated.
  3. Roast for 30–35 minutes, tossing halfway through, until golden brown and tender.
  4. Transfer cauliflower to a serving platter, drizzle with tahini ranch, and garnish with dill and chives. Serve warm.
