Ingredients
Roasted Carrots Ingredients
- 2 pounds carrots, peeled, quartered and cut into 3 inch pieces
- ¼ cup extra-virgin olive oil
- 1 teaspoon garlic powder
- 1 ½ teaspoons kosher salt
- ½ teaspoon freshly cracked black pepper
- 2 tablespoons finely chopped flat leaf parsley
Instructions
- Preheat the Oven: Preheat your oven to 425°F (220°C) and position a rack in the center of the oven to ensure even roasting.
- Prepare the Carrots: Peel the carrots, then quarter them lengthwise and cut into approximately 3-inch long pieces to ensure even cooking.
- Toss Ingredients: In a large bowl, combine the carrots with extra-virgin olive oil, garlic powder, kosher salt, and freshly cracked black pepper. Toss well to evenly coat all carrot pieces with the seasoning and oil.
- Arrange on Baking Sheet: Spread the seasoned carrots out in a single layer on a large rimmed baking sheet to allow for proper roasting without steaming.
- Roast the Carrots: Place the baking sheet in the preheated oven and roast the carrots for about 15 to 20 minutes until they turn golden brown and become tender when pierced with a fork.
- Finish with Parsley: Remove the carrots from the oven and immediately toss with finely chopped flat-leaf parsley to add freshness and color.
- Serve: Transfer the roasted carrots to a serving platter and serve warm as a delicious side dish.
