Description

These Roasted Carrots are a simple, delicious side dish perfect for any meal or holiday feast. Carrots are peeled, quartered, and tossed with extra-virgin olive oil, garlic powder, kosher salt, and freshly cracked black pepper, then roasted until golden and tender. Finished with fresh chopped flat-leaf parsley, this recipe is vegan, gluten-free, Whole30 compliant, and ready in just 30 minutes.

Ingredients

Roasted Carrots Ingredients

  • 2 pounds carrots, peeled, quartered and cut into 3 inch pieces
  • ¼ cup extra-virgin olive oil
  • 1 teaspoon garlic powder
  • 1 ½ teaspoons kosher salt
  • ½ teaspoon freshly cracked black pepper
  • 2 tablespoons finely chopped flat leaf parsley

Instructions

  1. Preheat the Oven: Preheat your oven to 425°F (220°C) and position a rack in the center of the oven to ensure even roasting.
  2. Prepare the Carrots: Peel the carrots, then quarter them lengthwise and cut into approximately 3-inch long pieces to ensure even cooking.
  3. Toss Ingredients: In a large bowl, combine the carrots with extra-virgin olive oil, garlic powder, kosher salt, and freshly cracked black pepper. Toss well to evenly coat all carrot pieces with the seasoning and oil.
  4. Arrange on Baking Sheet: Spread the seasoned carrots out in a single layer on a large rimmed baking sheet to allow for proper roasting without steaming.
  5. Roast the Carrots: Place the baking sheet in the preheated oven and roast the carrots for about 15 to 20 minutes until they turn golden brown and become tender when pierced with a fork.
  6. Finish with Parsley: Remove the carrots from the oven and immediately toss with finely chopped flat-leaf parsley to add freshness and color.
  7. Serve: Transfer the roasted carrots to a serving platter and serve warm as a delicious side dish.

Notes

  • Make sure to cut the carrots into uniform sizes to ensure even roasting.
  • If you prefer sweeter carrots, you can sprinkle a little brown sugar or drizzle honey before roasting.
  • Use fresh flat-leaf parsley for best flavor and garnish.
  • This dish pairs wonderfully with roasted meats, poultry, or can be enjoyed as a healthy vegan side.
  • Leftovers can be refrigerated in an airtight container for up to 3 days and reheated gently.
