  • 1 (5.2 ounce / 150g) package Boursin Fine Herbs & Garlic cheese
  • 2 cups packed fresh baby spinach

  1. Cook the pasta: Boil a large pot of salted water and cook the penne pasta al dente according to the package directions. Before draining, reserve about one cup of the pasta cooking water using a measuring cup for later use.
  2. Create the sauce: Drain the pasta and return it to the pot off the heat. Add the entire package of Boursin cheese and a small splash (a few tablespoons) of the reserved pasta water. Toss the pasta gently with two spoons, gradually adding more pasta water as needed, until the sauce reaches your desired creamy consistency.
  3. Add the spinach: Stir in the fresh baby spinach and continue tossing until the leaves are coated with sauce. Cover the pot with a lid and let the spinach wilt for a minute or two.
  4. Season and serve: Taste the pasta and season with salt and freshly ground black pepper as desired. Serve immediately while warm.
