Instructions

  1. Prepare the Dough: In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside. Beat in the eggs one at a time, making sure each egg is fully incorporated before adding the next. Stir in the vanilla extract and ube extract gently. Gradually add the dry ingredients to the wet ingredients in three additions, alternating with the whole milk. Start and finish with the dry ingredients. Mix just until combined to avoid overmixing. Cover the dough tightly with plastic wrap and refrigerate for at least 2 hours or overnight to chill and prevent spreading during baking.
  2. Preheat and Prep: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper to prevent sticking and ensure even baking. In a small bowl, mix together the powdered sugar and cornstarch if using, for the cookie coating.
  3. Shape the Cookies: Scoop tablespoon-sized portions of the chilled dough and use your hands to roll each portion into balls. The dough will be sticky, which is normal and manageable.
