- 2 tablespoons freshly squeezed lemon juice
- 1 tablespoon honey
- ⅓ cup pistachios, coarsely chopped
Instructions
- Preheat the oven: Preheat your oven to 375°F (190°C) to prepare for baking the salmon.
- Prepare the salmon: Rinse the salmon fillets under cold water and pat them dry completely with paper towels. Place the salmon skin side down on a parchment-lined quarter sheet baking pan. Season both sides with salt and pepper to taste.
- Make the glaze mixture: In a small bowl, combine the minced garlic, olive oil, Dijon mustard, lemon juice, and honey. Mix well to create a flavorful glaze.
- Apply glaze to salmon: Spread about three-quarters of the garlic-lemon-honey mixture evenly over the top of each salmon fillet, coating them well.
- Prepare pistachio crust: Add the coarsely chopped pistachios to the remaining glaze mixture and stir until pistachios are coated. Spoon this pistachio mixture on top of the salmon fillets and gently press it down using the back of a spoon to adhere the crust evenly.
- Bake the salmon: Place the baking pan in the preheated oven and bake for 15 to 20 minutes, or until the salmon flakes easily with a fork and the pistachio crust is lightly golden.
- Rest and serve: Remove the salmon from the oven and let it rest for 5 minutes to allow juices to settle. Serve warm with your favorite sides.
