Description

A refreshing and spicy Pineapple Mezcal Cocktail blending smoky mezcal with sweet pineapple juice, zesty lemon, and a kick of jalapeno simple syrup, topped with vibrant ginger beer for a perfectly balanced and invigorating drink.

Ingredients

Jalapeno Simple Syrup

  • ½ cup jalapenos, diced
  • 2 tbsp brown sugar
  • ¼ cup water

Pineapple Mezcal Cocktail

  • 3 oz pineapple juice
  • 2 oz mezcal
  • 1 oz lemon juice, freshly squeezed
  • 1 oz jalapeno simple syrup
  • 2 oz ginger beer

Instructions

  1. Make Jalapeno Simple Syrup: In a medium saucepan over medium heat, combine diced jalapenos, brown sugar, and water. Stir occasionally to dissolve the sugar but avoid letting the syrup boil.
  2. Simmer Syrup: Continue heating for about 5 minutes until the sugar is fully dissolved and the mixture is infused with jalapeno flavor. Remove the saucepan from heat, strain out the jalapeno pieces, and let the syrup cool to room temperature.
  3. Prepare Cocktail: In a cocktail shaker filled with ice, combine pineapple juice, mezcal, fresh lemon juice, and the cooled jalapeno simple syrup. Shake vigorously for 20 to 30 seconds until the shaker feels frosted on the outside.
  4. Serve: Strain the mixture into a chilled cocktail glass. Top with ginger beer and serve immediately for a refreshing and spicy cocktail experience.

Notes

  • Adjust the amount of jalapeno in the syrup according to your spice preference.
  • Use fresh lemon juice for the best flavor in the cocktail.
  • Ensure the jalapeno simple syrup is cooled before mixing into the cocktail to avoid diluting the ice shake effect.
  • Garnish with a jalapeno slice or pineapple wedge for an extra touch.
  • This recipe yields one serving but can be easily scaled for more guests.
