Ingredients

1 package (16 ounces) frozen pierogi

1 pound boneless skinless chicken breasts, cut into 2x1/2-inch strips

1/4 teaspoon salt

1/8 teaspoon pepper

2 tablespoons butter, divided

1/2 large sweet onion, thinly sliced

1/2 cup shredded cheddar cheese


Instructions

  1. Cook the pierogi according to the package directions; drain and set aside.
  2. Meanwhile, toss the chicken strips with salt and pepper.
  3. In a large nonstick skillet, heat 1 tablespoon of butter over medium-high heat. Add the chicken and sliced onion, sautéing until the chicken is no longer pink, about 5-7 minutes. Remove the chicken and onion mixture from the pan.
  4. In the same skillet, heat the remaining 1 tablespoon of butter over medium heat. Add the pierogi and sauté until lightly browned, about 5-6 minutes.
  5. Stir the chicken mixture into the pierogi. Sprinkle the shredded cheddar cheese over the top, cover the skillet, and remove from the heat. Let it stand for 2-3 minutes until the cheese is melted.
  6. Serve and enjoy!

  • For a vegetarian version, skip the chicken and add sautéed vegetables such as bell peppers, mushrooms, or spinach.
  • Swap the cheddar for mozzarella, gouda, or Swiss cheese for a different flavor.
