Ingredients

3 cups all-purpose flour

1/2 cup white sugar

1/2 teaspoon salt

1 cup butter or margarine

1 1/2 cups light corn syrup

1 1/2 cups white sugar

4 large eggs

3 tablespoons butter or margarine, melted

1 1/2 teaspoons vanilla extract

2 1/2 cups chopped pecans

Instructions

  1. Preheat the oven to 350°F (175°C) and lightly grease a 10×15-inch jellyroll pan.
  2. In a large bowl, combine flour, 1/2 cup sugar, and salt. Cut in 1 cup butter until the mixture resembles coarse crumbs.
  3. Press the mixture firmly into the prepared pan to form the crust. Bake for 20 minutes.
  4. While the crust bakes, mix corn syrup, 1 1/2 cups sugar, eggs, melted butter, and vanilla extract in a large bowl until smooth.
  5. Stir in chopped pecans and spread the mixture evenly over the hot crust.
  6. Bake for an additional 25 minutes or until the filling is set and no longer jiggles in the center.
  7. Cool completely in the pan on a wire rack before slicing into bars.

Notes

  • Let bars cool completely before slicing for clean, even cuts.
  • Dark corn syrup can be used instead of light for a richer flavor.
  • A mix of pecans and walnuts can add extra depth to the flavor.
  • For a chocolate twist, add a layer of chocolate chips on top of the crust before adding the filling.
  • Bars are delicious at room temperature but can be warmed for a softer texture.
