Description
A quick and colorful no-bake dessert made with peanut butter, butterscotch chips, and rainbow marshmallows for a chewy, sweet, and creamy treat.
Ingredients
1 package (300 g) butterscotch chips
1 cup crunchy or creamy peanut butter
1/2 cup butter
1 package (250 g) rainbow miniature marshmallows
1 teaspoon vanilla extract
Instructions
- Place the bag of marshmallows in the freezer and line an 8×8-inch pan with parchment paper.
- In a medium saucepan over low heat, melt the butterscotch chips, peanut butter, and butter, stirring until smooth.
- Remove from heat and allow to cool slightly so the marshmallows don’t melt when added.
- Quickly fold in the vanilla extract and frozen marshmallows until evenly coated.
- Spread the mixture evenly into the prepared pan, smoothing the top.
- Refrigerate until firm, about 1 hour.
- Remove from the pan, slice into squares, and store in the refrigerator or freezer.
Notes
- Freezing marshmallows prevents them from melting when mixed into the warm peanut butter mixture.
- Can substitute chocolate chips, white chocolate chips, or nut-free butters for different flavors.
- For extra crunch, add pretzels, peanuts, or chopped nuts.
- Best stored chilled to maintain shape and texture.
