Description

A quick and colorful no-bake dessert made with peanut butter, butterscotch chips, and rainbow marshmallows for a chewy, sweet, and creamy treat.


Ingredients

1 package (300 g) butterscotch chips

1 cup crunchy or creamy peanut butter

1/2 cup butter

1 package (250 g) rainbow miniature marshmallows

1 teaspoon vanilla extract


Instructions

  1. Place the bag of marshmallows in the freezer and line an 8×8-inch pan with parchment paper.
  2. In a medium saucepan over low heat, melt the butterscotch chips, peanut butter, and butter, stirring until smooth.
  3. Remove from heat and allow to cool slightly so the marshmallows don’t melt when added.
  4. Quickly fold in the vanilla extract and frozen marshmallows until evenly coated.
  5. Spread the mixture evenly into the prepared pan, smoothing the top.
  6. Refrigerate until firm, about 1 hour.
  7. Remove from the pan, slice into squares, and store in the refrigerator or freezer.

Notes

  • Freezing marshmallows prevents them from melting when mixed into the warm peanut butter mixture.
  • Can substitute chocolate chips, white chocolate chips, or nut-free butters for different flavors.
  • For extra crunch, add pretzels, peanuts, or chopped nuts.
