Ingredients
For the Chicken
- 8 Chicken Thighs, boneless, skinless
- 3 Tablespoons Low Sodium Soy Sauce
- 1 Tablespoon Canola Oil, or olive oil
- 3 Cloves Garlic, finely minced
- 2 teaspoons Fresh Ginger, grated
For the Sauce
- 1/2 Cup Natural Peanut Butter
- 1 ½ Tablespoons Hoisin Sauce
- 15 Ounce Can Crushed Tomatoes
- 1 Cup Chicken Stock
- 1/4 teaspoon Sesame Oil
- 1 Tablespoon Honey
- 2 teaspoons White Vinegar
- 1 teaspoon Ground Cumin
- 1 teaspoon Ground Coriander
- Pinch Red Pepper Flakes
- Cilantro, minced (for garnish)
- Peanuts, chopped (for garnish)
Instructions
- Marinate the Chicken: Cut the chicken thighs into bite-sized pieces and place them into a large bowl. Add the low sodium soy sauce and mix thoroughly until all the chicken pieces are evenly coated. Set the chicken aside to allow the flavors to develop while you prepare the sauce.
- Prepare the Peanut Butter Sauce: In a medium-sized mixing bowl, whisk together the natural peanut butter, hoisin sauce, crushed tomatoes, chicken stock, sesame oil, honey, white vinegar, ground cumin, ground coriander, and a pinch of red pepper flakes until smooth and well combined.
- Cook the Chicken: Heat the canola oil in a large non-stick pan over medium-high heat. Carefully add the marinated chicken pieces to the pan in a single layer, being cautious of splattering oil. Let the chicken cook undisturbed for 5 minutes to develop a good sear.
- Flip and Continue Cooking: Turn the chicken pieces over and allow them to cook for another 5 minutes until they are cooked through and slightly browned on all sides.
- Add Aromatics: Add the finely minced garlic and grated fresh ginger to the pan and sauté for 1 minute, stirring constantly to release their flavors.
- Add the Sauce and Simmer: Pour the prepared peanut butter sauce into the pan with the chicken. Stir well to coat the chicken evenly, then let the mixture cook for about 3 minutes or until the sauce begins to thicken slightly.
- Season and Serve: Taste the sauce and add salt if necessary. Serve the Peanut Butter Chicken hot over cooked rice, garnished with minced cilantro and chopped peanuts. Pair with an Asian cucumber salad for a complete meal.
