Ingredients

8 cups peeled and thinly sliced fresh peaches

½ cup granulated sugar

½ cup + 2 tablespoons all-purpose flour, divided

1 tablespoon cornstarch

2 teaspoons ground cinnamon, divided

¼ teaspoon salt

¾ cup packed light brown sugar

½ cup (1 stick) salted butter, room temperature

1 ¾ cup old-fashioned oats


Instructions

  1. Preheat the oven: Preheat the oven to 400°F (200°C). Butter a 9×9-inch baking pan and set aside.

  2. Prepare the peaches: In a large bowl, combine peaches, granulated sugar, 2 tablespoons of flour, cornstarch, 1 teaspoon of cinnamon, and salt. Mix well, then pour the peach mixture into the prepared pan.

  3. Make the crumble topping: In the same bowl, cream together brown sugar, the remaining ½ cup of flour, butter, and the remaining cinnamon until it forms a clumpy mixture. Add oats and mix to form a coarse texture. For the best results, use your hands to blend.

  4. Assemble the crisp: Crumble the oat mixture evenly over the peaches.

  5. Bake: Bake for 20 to 25 minutes, or until the oats turn golden brown and the peach filling is bubbling.
