Description

A flavorful and simple recipe for oven-roasted cauliflower topped with Parmesan cheese and seasoned with garlic, onion powder, and smoked paprika. This dish makes a delicious and healthy side that is crispy on the outside, tender on the inside, and garnished with fresh parsley.

Ingredients

Vegetables

  • 1 large head of cauliflower, cut into florets

Seasonings & Oil

  • 1 tablespoon extra virgin olive oil
  • Kosher salt, to taste
  • Black pepper, to taste
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon smoked paprika

Cheese & Garnish

  • ½ cup Parmesan cheese, grated
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat Oven: Preheat your oven to 400ºF (200ºC) and line a baking sheet with parchment paper to prevent sticking and allow easy cleanup.
  2. Prepare Cauliflower: Cut the cauliflower head into bite-sized florets and place them into a large mixing bowl.
  3. Season Cauliflower: Drizzle the florets with olive oil, then sprinkle with kosher salt, black pepper, garlic powder, onion powder, and smoked paprika. Toss thoroughly with your hands to ensure every piece is evenly coated with the seasoning and oil.
  4. Arrange on Baking Sheet: Spread the seasoned cauliflower florets out in a single layer on the prepared baking sheet to allow for even roasting.
  5. First Roast: Roast the cauliflower in the oven for 15 minutes to begin cooking and browning the edges.
  6. Add Parmesan Cheese: Sprinkle the grated Parmesan cheese evenly over the roasted cauliflower.
  7. Final Roast: Return to the oven and roast for an additional 15 minutes until the cauliflower is tender inside and crispy on the outside, and the cheese is melted and slightly golden.
  8. Garnish and Serve: Remove from the oven and sprinkle with freshly chopped parsley for a pop of color and fresh flavor. Serve warm and enjoy!

Notes

  • For extra crispiness, spread the cauliflower in a single layer without overcrowding on the baking sheet.
  • Use freshly grated Parmesan cheese for best melting and flavor.
  • You can adjust the smoked paprika amount to your spice preference or substitute with regular paprika for a milder taste.
  • This dish is great as a side or a healthy snack.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated in the oven to maintain crispness.
