Ingredients

Chicken and Coating

  • 1.5 lbs boneless, skinless chicken breasts (~4 breasts)
  • ½ cup all-purpose flour, divided
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ¾ cup Italian panko bread crumbs
  • 2 oz grated Parmesan cheese (~⅓ cup)
  • 3 large eggs

  • 3 tablespoons olive oil

  • 1 large lemon, cut into 8 wedges


Instructions

  1. Prepare the chicken: Place the chicken breasts on a cutting board and slice them in half lengthwise. Use a meat tenderizer to pound each piece until it is about ¼ inch thick and evenly flattened. Set aside.
  2. Mix the dry ingredients: On one plate, place ¼ cup of the flour. On another plate, combine the remaining ¼ cup of flour with the Italian panko breadcrumbs, grated Parmesan cheese, kosher salt, and black pepper. Mix together with a fork and set aside.
  3. Prepare the egg wash: Crack the 3 large eggs into a bowl or plate with high sides. Whisk the eggs until fully combined and set aside.
  4. Dredge the chicken: Coat each chicken piece first in the ¼ cup flour on the first plate. Then dip it into the egg wash, making sure it is fully covered. Finally, press the chicken firmly onto the breadcrumb and Parmesan mixture, coating all sides completely. Place the coated chicken on a cutting board to rest.
  5. Cook the chicken: Heat the olive oil in a large cast iron skillet over medium heat until fragrant. Add 3 to 4 chicken breasts to the pan and cook for about 3 minutes on one side. Flip and cook for an additional 2 to 3 minutes on the other side, or until the chicken is golden brown and fully cooked through. Repeat until all chicken pieces are cooked.
