Description

This vibrant One Pan Chicken Fajitas recipe brings together tender, seasoned chicken breast and colorful bell peppers and onions, all baked to perfection in a single pan. It’s a quick and flavorful meal that’s perfect for busy weeknights, delivering classic Tex-Mex flavors with minimal cleanup.

Ingredients

Vegetables

  • 2 small yellow onions
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 yellow bell pepper

Protein

  • 2 lbs boneless skinless chicken breast

Seasonings & Oil

  • 1/4 cup olive oil
  • 4 teaspoons chili powder
  • 1 teaspoon oregano
  • 4 teaspoons fine sea salt
  • 2 teaspoons cumin
  • 1/4 teaspoon cayenne pepper
  • 1 teaspoon paprika

Instructions

  1. Preheat and prepare: Preheat the oven to 425 degrees Fahrenheit. Lightly oil a baking sheet or coat it with nonstick spray to prevent sticking during baking.
  2. Mix seasonings: In a small bowl, combine chili powder, oregano, salt, cumin, cayenne pepper, and paprika. Stir well to evenly blend all the spices.
  3. Season chicken: Place the chicken breasts in a large mixing bowl. Add 1 tablespoon of the prepared seasoning mixture and toss to coat the chicken evenly with the spices.
  4. Add vegetables and more seasoning: Add the sliced bell peppers and onions to the bowl with the chicken. Sprinkle the remaining seasoning mixture over everything and toss well to coat all the ingredients thoroughly.
  5. Coat with oil: Pour the olive oil over the chicken, peppers, and onions. Toss again to make sure all pieces are lightly coated in oil, which helps to roast and enhance flavors.
  6. Arrange on baking sheet: Spread the chicken, bell peppers, and onion mixture in a single even layer on the prepared baking sheet, allowing everything room to roast evenly.
  7. Bake: Place the baking sheet in the oven and bake for 25 minutes, or until the chicken is fully cooked through and the vegetables are tender. Once cooked, optionally top with fresh lime juice and chopped cilantro for added brightness.
  8. Serve: Serve the chicken fajitas hot, over rice, with beans, or wrapped in warm corn or flour tortillas for an authentic Tex-Mex experience.
