A delightful appetizer featuring savory sautéed mushrooms infused with fresh thyme, served atop crisp crostini—perfect for entertaining or a cozy snack.
Ingredients
½ crusty baguette (about 14 slices, each ~¼” thick)
¼ cup olive oil (or butter for non-vegan)
Salt & pepper, to taste
16 oz cremini mushrooms, cleaned and sliced (~¼” thick)
1 bunch fresh thyme leaves (plus extra for garnish)
1 shallot, minced (or small onion)
¼ cup sherry vinegar
2 tsp flour
¼ cup vegetable stock (or broth/water)
3–4 Tbsp olive oil or butter
Instructions
- Preheat oven or grill pan. Brush baguette slices with oil and season with salt and pepper. Grill or bake at 450 °F for 7 minutes, flipping halfway, until golden and crisp.
- Heat oil in a skillet. Add mushrooms, shallot, and thyme. Sauté for 2 minutes.
- Deglaze with sherry vinegar and simmer for 30 seconds.
- Stir in flour, cook for 30 seconds, then add stock and stir until thickened. Season to taste.
- Spoon mushroom mixture onto each crostini. Garnish with thyme and a drizzle of olive oil. Serve warm.

- Add goat cheese or ricotta under mushrooms for extra richness.
- Use gluten-free bread for a gluten-free version.
- Add minced garlic for bolder flavor.
- Substitute balsamic vinegar for a sweeter profile.
