Description

A delightful appetizer featuring savory sautéed mushrooms infused with fresh thyme, served atop crisp crostini—perfect for entertaining or a cozy snack.


Ingredients

½ crusty baguette (about 14 slices, each ~¼” thick)

¼ cup olive oil (or butter for non-vegan)

Salt & pepper, to taste

16 oz cremini mushrooms, cleaned and sliced (~¼” thick)

1 bunch fresh thyme leaves (plus extra for garnish)

1 shallot, minced (or small onion)

¼ cup sherry vinegar

2 tsp flour

¼ cup vegetable stock (or broth/water)

34 Tbsp olive oil or butter


Instructions

  1. Preheat oven or grill pan. Brush baguette slices with oil and season with salt and pepper. Grill or bake at 450 °F for 7 minutes, flipping halfway, until golden and crisp.
  2. Heat oil in a skillet. Add mushrooms, shallot, and thyme. Sauté for 2 minutes.
  3. Deglaze with sherry vinegar and simmer for 30 seconds.
  4. Stir in flour, cook for 30 seconds, then add stock and stir until thickened. Season to taste.
  5. Spoon mushroom mixture onto each crostini. Garnish with thyme and a drizzle of olive oil. Serve warm.
