For the Pasta
- 8 oz fettuccine pasta
For the Mushroom Cream Sauce
- 1 tablespoon butter
- 8 oz sliced baby bella mushrooms
- 10-12 cloves garlic, minced
- ½ teaspoon dried oregano
- ½ cup heavy cream
- 1 cup parmesan cheese, freshly grated
- 1 cup vegetable broth
- Salt, to taste
Instructions
- Prepare the Butter and Mushrooms: Melt the butter in a large skillet over medium heat. Add the sliced baby bella mushrooms and minced garlic to the skillet.
- Sauté the Mushrooms: Cook the mushrooms and garlic for 15 to 20 minutes, stirring occasionally, until the mushrooms reduce in size, release their liquid, and start to brown. Continue cooking until all the liquid has evaporated and the mushrooms are nicely caramelized.
- Cook the Pasta: Meanwhile, cook the fettuccine pasta in boiling salted water according to the package instructions until al dente. Drain and set aside.
- Make the Cream Sauce: Once the mushrooms have cooked down, add the heavy cream, dried oregano, vegetable broth, salt to taste, and freshly grated parmesan cheese to the skillet. Stir well to combine all the ingredients.
- Toss Pasta in Sauce: Add the cooked fettuccine noodles to the skillet. Toss and stir over medium heat using tongs until the sauce is absorbed by the noodles. Although it may look like there is too much liquid initially, keep tossing until most of it is absorbed and the sauce thickens and coats the pasta thoroughly.
- Serve Immediately: Remove from heat and serve the creamy mushroom pasta hot for the best flavor and texture.
