Instructions
- Prepare the mussels. Wash and drain the mussels thoroughly to remove any grit or debris, ensuring they are clean and ready for cooking.
- Make the sauce. In a small cup, combine the sake, sugar, and white miso paste. Whisk vigorously until the sugar is completely dissolved, then set the mixture aside.
- Heat the skillet and aromatics. Place a large deep skillet over medium-high heat and add the neutral oil. Swirl to coat the pan evenly, then add the smashed garlic and shredded ginger. Stir fry the aromatics for 10-15 seconds until fragrant.
- Add the mussels. Add the cleaned mussels to the skillet and stir to combine with the aromatics.
- Pour sauce and steam. Pour the miso-sake sauce over the mussels. Cover the skillet tightly with a lid and cook for 2 minutes to steam.
- Stir and continue steaming. Remove the lid and gently stir the mussels so that those on top move to the bottom. Cover again and cook for an additional 1 minute.
- Check for doneness. The mussels should be open. If some are still closed, stir again and cook covered for another minute until all have opened.
- Finish the dish. Drizzle the toasted sesame oil over the mussels. You may transfer the mussels to a large serving platter or serve directly from the pan.
- Garnish and serve. Sprinkle chopped scallions over the mussels and serve with lemon wedges on the side for squeezing over just before eating.
