Description

Mini Egg Lunchbox Bites are quick, protein-packed egg and cheese muffins perfect for school lunches, snacks, or breakfasts on the go. Customizable, kid-friendly, and freezer-friendly for easy meal prep.


Ingredients

Spray oil (for greasing the tray)

5 medium eggs

25 g grated cheese


Instructions

  1. Preheat oven to 180°C (fan).
  2. Spray a silicone mini muffin tray with oil.
  3. Sprinkle grated cheese into each muffin hole.
  4. Crack eggs into a small jug and whisk with a fork.
  5. Pour egg mixture into the muffin holes over the cheese.
  6. Bake for 14 minutes until set.
  7. Allow to cool slightly before removing from the tray.
