Description

Ingredients

12 ounce linguine

12 ounce cherry or grape tomatoes, halved or quartered if large

1 onion, thinly sliced (about 2 cups)

4 cloves of garlic, thinly sliced

1/2 teaspoon red pepper flakes

2 sprigs basil, plus torn leaves for garnish

2 tablespoon extra-virgin olive oil, plus more for serving

Coarse salt

Freshly ground black pepper

4 1/2 cups water

Freshly grated Parmesan cheese, for serving


Instructions

  1. Combine pasta, tomatoes, onion, garlic, red-pepper flakes, basil, olive oil, 2 teaspoons salt, 1/4 teaspoon pepper, and water in a large straight-sided skillet. Make sure the linguine lays flat in the pan.
  2. Bring the mixture to a boil over high heat. Once it boils, reduce the heat slightly and continue to boil, stirring and turning the pasta frequently with tongs or a fork. Cook until the pasta is al dente and most of the water has evaporated, about 9 minutes.
  3. Season the pasta to taste with additional salt and pepper. Divide among four bowls, garnish with torn basil leaves, and serve with a drizzle of olive oil and freshly grated Parmesan cheese.

Notes

  • Feel free to substitute any pasta shape, such as spaghetti, fettuccine, or penne. Adjust the cooking time as needed.
  • If you don’t have fresh basil, you can use oregano, thyme, or dried basil as a substitute.
  • To make this dish heartier, consider adding grilled chicken, shrimp, or sausage.
