Ingredients

4 boneless, skinless chicken breasts

Salt and pepper to taste

2 tbsp olive oil

3 cloves garlic, minced

½ cup chicken broth

¾ cup heavy cream

½ cup grated Parmesan cheese

½ tsp red pepper flakes

½ tsp dried oregano

½ tsp dried thyme

⅓ cup sun-dried tomatoes (chopped, packed in oil)

Fresh basil (for garnish)


Instructions

  • Season the Chicken:

    • Season both sides of the chicken breasts with salt and pepper to taste.

  • Sear the Chicken:

    • Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and sear for 4-5 minutes per side until golden brown. Remove chicken from skillet and set aside.

  • Sauté Garlic:

    • In the same skillet, add the minced garlic and sauté for 30 seconds or until fragrant.

  • Deglaze the Pan:

    • Pour in the chicken broth, scraping the brown bits from the bottom of the skillet.

  • Make the Sauce:

    • Add the heavy cream, Parmesan cheese, red pepper flakes, oregano, thyme, and sun-dried tomatoes. Stir well and let the sauce simmer for 2-3 minutes to combine the flavors.

  • Cook the Chicken:

    • Return the chicken to the skillet, spooning the sauce over the chicken. Cover and simmer on low heat for 10-15 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).

  • Serve:

    • Garnish with fresh basil and serve with pasta, mashed potatoes, or crusty bread to soak up the sauce.
