Ingredients
For the Earl Grey Cookies
- 3 tbsp (12 g) Earl Grey tea
- 2 3/4 cups (344 g) all purpose flour, spooned and leveled
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup (200 g) granulated white sugar
- 1 cup (227 g) unsalted butter, softened
- 1 egg, at room temperature
- 2 tsp vanilla bean paste
For the Lavender Sugar
- 1/2 cup (100 g) granulated white sugar
- 1/2 tbsp culinary lavender
For the Lavender Cream Cheese Frosting
- 4 oz (113 g) cream cheese
- 1/4 cup (56 g) unsalted butter, softened
- 1 cup (130 g) powdered sugar
- 1/2 tbsp culinary lavender
- 1 tsp vanilla bean paste
- Purple food coloring (optional)
Instructions
- Prepare Lavender Sugar: Add 1/2 tbsp culinary lavender to a food processor and pulse until finely ground. Pass through a sieve to remove larger bits. Divide the lavender in half, setting aside half for frosting. Mix the remaining lavender with 1/2 cup granulated sugar in a bowl, and set aside.
- Preheat Oven and Prepare Baking Sheets: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper for ready use.
- Grind Earl Grey Tea: Place 3 tbsp Earl Grey tea in a food processor and pulse until finely ground, then sieve to remove any large pieces.
- Mix Dry Ingredients: In a medium bowl, whisk together 2 3/4 cups all-purpose flour, 1/2 tsp baking powder, 1/2 tsp baking soda, 1/2 tsp salt, and the ground Earl Grey tea. Set aside.
- Cream Butter and Sugar: In a mixing bowl, cream together 1 cup granulated sugar and 1 cup softened unsalted butter using an electric mixer on high speed for 1-2 minutes until very light and fluffy.
- Add Egg and Vanilla: Add 1 room temperature egg and 2 tsp vanilla bean paste to the butter mixture. Mix on medium speed until the mixture is pale in color and very fluffy, about 1-2 minutes.
- Combine Dry and Wet Ingredients: Gradually add the dry ingredients into the wet mixture and mix on low speed just until combined. Do not overmix.
- Form Cookie Dough Balls: Using a 2 tbsp cookie scoop, portion the dough into balls. Roll each dough ball in the prepared lavender sugar to coat evenly.
- Arrange on Baking Sheets: Place the dough balls on the prepared baking sheets, spacing them at least 2 inches apart. Slightly flatten each dough ball and try to form them into circular shapes.
- Bake Cookies: Bake the cookies in batches of 6-8 at a time for 9-10 minutes until set. Immediately after removing from the oven, gently press a large circular cookie cutter around each cookie to perfect the round shape. Let cookies cool on the sheet for 5 minutes.
- Cool Cookies Completely: Transfer the cookies to a wire rack to cool completely before frosting.
- Make Lavender Cream Cheese Frosting: While cookies bake and cool, beat together 4 oz cream cheese and 1/4 cup softened unsalted butter with an electric mixer for 3-4 minutes until fluffy. Add 1 cup powdered sugar, the reserved ground lavender, and 1 tsp vanilla bean paste. Mix until very fluffy. Optionally, add purple food coloring for color.
- Frost Cookies: Once cookies are completely cooled, spread about 1 tbsp of the lavender cream cheese frosting evenly on each cookie using a mini offset spatula.
- Serve and Enjoy: Enjoy these delicate, fragrant London Fog Cookies alongside your favorite cup of tea or as a delightful sweet treat anytime.
Notes
- Ensure to spoon and level flour for accurate measurement to maintain cookie texture.
- Grinding the Earl Grey tea finely is key to infusing the cookies with the signature flavor without gritty texture.
- Rolling the dough balls in lavender sugar provides a subtle floral crunch and enhances flavor.
- Pressing the circular cutter around freshly baked cookies helps achieve uniform, professional shapes.
- Adjust the amount of frosting to preference; the lavender flavor in frosting can be intensified by adding a bit more ground lavender if desired.
