Ingredients

2 cups chicken broth

2 cups uncooked instant rice

1 pound uncooked medium shrimp, peeled and deveined

1/2 cup chopped green onions

2 tablespoons butter

2 tablespoons olive oil

2 teaspoons minced garlic

3 tablespoons lemon juice

1/4 teaspoon pepper

1/2 cup grated Parmesan cheese

2 tablespoons minced fresh parsley


Instructions

  1. In a small saucepan, bring the chicken broth to a boil. Stir in the rice, cover the saucepan, and remove from the heat. Let the rice stand for 5 minutes to absorb the broth.
  2. Meanwhile, in a large cast-iron or heavy skillet, heat the butter and olive oil over medium heat. Add the shrimp and chopped green onions, cooking for 4-5 minutes, or until the shrimp turn pink and opaque.
  3. Add the minced garlic to the skillet and cook for an additional minute, stirring to combine.
  4. Stir in the lemon juice and pepper to the shrimp mixture. Cook for 1 minute longer.
  5. Stir the grated Parmesan cheese and fresh parsley into the rice. Fluff with a fork to combine.
