Ingredients
2 cups chicken broth
2 cups uncooked instant rice
1 pound uncooked medium shrimp, peeled and deveined

3 tablespoons lemon juice
1/4 teaspoon pepper
1/2 cup grated Parmesan cheese
2 tablespoons minced fresh parsley
Instructions
- In a small saucepan, bring the chicken broth to a boil. Stir in the rice, cover the saucepan, and remove from the heat. Let the rice stand for 5 minutes to absorb the broth.
