  • 16 ounce bag mini marshmallows, divided
  • ½ teaspoon lemon extract
  • ½ teaspoon vanilla extract
  • 6 cups Rice Krispies cereal


Instructions

  1. Prepare Lemon Sugar: Zest one lemon into a small bowl, add 1 Tablespoon granulated sugar, and mix until crumbly and combined. Set aside.
  2. Make Lemon Glaze: Juice the same lemon into a small bowl, add ½ cup powdered sugar, and whisk until smooth. Set aside.
  3. Prep Baking Dish: Line a 9-inch square baking dish with parchment paper, then set aside.
  4. Melt Butter and Marshmallows: In a large saucepan, melt 6 tablespoons salted butter over medium heat. Once melted, reduce heat to low and add all but 1 cup of mini marshmallows. Stir continuously with a spatula until marshmallows have fully melted. Remove from heat.
  5. Add Flavors and Cereal: Stir in ½ teaspoon lemon extract and ½ teaspoon vanilla extract until blended. Fold in 6 cups Rice Krispies cereal followed by the remaining 1 cup of mini marshmallows, stirring gently to combine.
  6. Assemble Treats: Pour the mixture into the prepared baking dish and press gently with fingertips to evenly spread and compact the mixture.
  7. Add Toppings: Immediately drizzle the lemon glaze over the treats, then sprinkle the lemon sugar mixture on top.
