Ingredients
3 tablespoons olive oil
2 cups chopped celery
2 cups chopped carrots
1 yellow onion, chopped
1/2 teaspoon salt
1 teaspoon poultry seasoning
10 cups chicken broth (plus up to 2 more cups as needed)
16 ounces orzo, uncooked
4 cups shredded chicken (rotisserie recommended)
2 cups heavy cream
2 tablespoons lemon juice (or up to 1/4 cup to taste)
Optional garnish: fresh parsley
Instructions
- Heat olive oil in a large stock pot over medium-high heat. Add celery, carrots, onion, salt, and poultry seasoning. Sauté for 5–10 minutes until vegetables are tender.
- Add chicken broth, orzo, and shredded chicken. Bring to a boil, then simmer for 10–14 minutes until orzo is al dente.
- Stir in heavy cream and lemon juice. Simmer for another 2–3 minutes.
- Adjust thickness with extra broth and flavor with more lemon juice if needed. Garnish with parsley.
- Serve hot and enjoy!
