Ingredients

3 tablespoons olive oil

2 cups chopped celery

2 cups chopped carrots

1 yellow onion, chopped

1/2 teaspoon salt

1 teaspoon poultry seasoning

10 cups chicken broth (plus up to 2 more cups as needed)

16 ounces orzo, uncooked

4 cups shredded chicken (rotisserie recommended)

2 cups heavy cream

2 tablespoons lemon juice (or up to 1/4 cup to taste)

Optional garnish: fresh parsley


Instructions

  1. Heat olive oil in a large stock pot over medium-high heat. Add celery, carrots, onion, salt, and poultry seasoning. Sauté for 5–10 minutes until vegetables are tender.
  2. Add chicken broth, orzo, and shredded chicken. Bring to a boil, then simmer for 10–14 minutes until orzo is al dente.
  3. Stir in heavy cream and lemon juice. Simmer for another 2–3 minutes.
  4. Adjust thickness with extra broth and flavor with more lemon juice if needed. Garnish with parsley.
  5. Serve hot and enjoy!
