Description

Ingredients

1 bunch kale (curly or lacinato)

2 Cosmic Crisp apples

¼ red onion, finely diced

3 tablespoons apple cider vinegar

2 tablespoons honey or maple syrup (optional)

1 tablespoon Dijon mustard

3 teaspoons poppy seeds

3 tablespoons olive oil

¼ teaspoon salt

⅛ teaspoon pepper


Instructions

  1. Remove the ribs from the kale and slice leaves into thin ribbons.
  2. Place kale in a large bowl, drizzle lightly with olive oil, and massage for 3–5 minutes until tender.
  3. Dice apples into cubes or thin matchsticks.
  4. In a jar, combine onion, apple cider vinegar, honey or maple syrup, Dijon mustard, poppy seeds, olive oil, salt, and pepper. Seal and shake until emulsified.
  5. Add kale and apples to a salad bowl, pour dressing over, and toss well.
