Description

A quick and flavorful fusion dish, these Italian Quesadillas combine rotisserie chicken, mozzarella, fresh basil, and pizza sauce inside a crispy tortilla for a cheesy, golden-brown meal in minutes.


Ingredients

4 tortillas

16 oz rotisserie chicken, chopped or shredded

2 tbsp fresh basil, chopped or chiffonade

1 cup part-skim mozzarella cheese

½ jar pizza sauce (about 135 g)


Instructions

  1. Heat a skillet over medium-low heat and lightly grease with cooking spray or olive oil.
  2. Place a tortilla in the skillet.
  3. On one half of the tortilla, add chicken, basil, mozzarella, and pizza sauce.
  4. Cook until cheese starts to melt and the tortilla browns underneath.
  5. Fold tortilla in half to form a half-moon shape.
  6. Cook 1 more minute, then flip and cook until golden and cheese is fully melted.
  7. Remove, cut into halves or quarters, and serve hot.
