A quick and flavorful fusion dish, these Italian Quesadillas combine rotisserie chicken, mozzarella, fresh basil, and pizza sauce inside a crispy tortilla for a cheesy, golden-brown meal in minutes.
Ingredients
4 tortillas
16 oz rotisserie chicken, chopped or shredded
2 tbsp fresh basil, chopped or chiffonade
1 cup part-skim mozzarella cheese
½ jar pizza sauce (about 135 g)
Instructions
- Heat a skillet over medium-low heat and lightly grease with cooking spray or olive oil.
- Place a tortilla in the skillet.
- On one half of the tortilla, add chicken, basil, mozzarella, and pizza sauce.
- Cook until cheese starts to melt and the tortilla browns underneath.
- Fold tortilla in half to form a half-moon shape.
- Cook 1 more minute, then flip and cook until golden and cheese is fully melted.
- Remove, cut into halves or quarters, and serve hot.

- Add vegetables like peppers, mushrooms, or spinach.
