Lemon Dipping Sauce
- 1/2 cup mayonnaise
- 1 teaspoon lemon juice
- 1 teaspoon Italian seasoning
- 1 teaspoon minced garlic
Instructions
- Prepare the Artichokes: Snap off the tough outer leaves and remove the outer part of the stem. Slice off the top 1/2 inch of the artichoke to allow steam to penetrate and cook the heart effectively.
- Place in Instant Pot: Set the trimmed artichokes on the trivet inside the Instant Pot. Pour in 1 cup of liquid (water or broth). Squeeze lemon juice over the artichokes and season with salt, pepper, and Italian seasoning to taste.
- Pressure Cook: Seal the Instant Pot lid and set the valve to sealing. Pressure cook on high for 10 minutes. Once the cooking cycle ends, perform a manual release of the pressure.
- Make Garlic Butter: In a small bowl, combine the melted salted butter with minced garlic and dried parsley. Stir until well blended and fragrant.
