Description
Inside-Out Stuffed Peppers are a delicious twist on the classic stuffed pepper dish. Instead of hollowing out the peppers, this recipe combines all the savory ingredients, including ground beef, rice, and cheese, right in the casserole dish. It’s a hearty one-pot dish that’s guaranteed to please everyone at the table.
Ingredients
1 pound ground beef
1/2 cup chopped onion
1 can (14-1/2 ounces) stewed tomatoes, cut up
1 large green pepper, chopped
1/2 cup uncooked long grain rice
1/2 cup water
2 teaspoons Worcestershire sauce
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup shredded cheddar cheese
Instructions
- Preheat your oven to 350°F.
- In a large skillet, cook the ground beef over medium heat until no longer pink, breaking it up as it cooks. Drain excess fat.
- Transfer the cooked beef to a greased 2-quart casserole dish.
- Add the chopped onion, stewed tomatoes, green pepper, uncooked rice, water, Worcestershire sauce, salt, and pepper to the casserole dish. Stir to combine.
- Cover the casserole with a lid or foil and bake for about 1 hour, or until the rice is tender.
- Uncover the casserole, sprinkle the shredded cheddar cheese over the top, and return to the oven. Bake for an additional 5 minutes, or until the cheese is melted and bubbly.
- Serve hot and enjoy!
Notes
- For added flavor and nutrients, try mixing in other vegetables like diced tomatoes, corn, or spinach.
- For a spicy version, add a pinch of red pepper flakes or a chopped jalapeño.
- If you’re not a fan of cheddar, you can use mozzarella, Monterey Jack, or a blend of your favorite cheeses.
- Replace the ground beef with lean ground turkey or chicken for a lighter option.
