½ cup flour (for dusting)
½ cup flour
1 cup milk
1 large egg
½ tsp brown sugar
1 tsp garlic powder
1 tsp onion powder
¼ tsp cayenne
2 tsp smoked paprika
1 tsp kosher salt
1 tsp black pepper
2 cups panko
Canola oil (about 1 cup for frying)
Kosher salt, for finishing
Instructions
- Peel and slice onions into ½″ rings. Separate individual rings.
- Coat each ring lightly with ½ cup flour and shake off excess.
- Whisk together batter ingredients (½ cup flour, milk, egg, brown sugar, garlic powder, onion powder, cayenne, smoked paprika, salt, and pepper) until smooth.
- Add panko to a separate bowl.
- Dredge floured rings in batter, then press into panko until coated. Place on a tray.
- Heat oil in a frying pan over medium-high heat. Fry rings in batches for 2–3 minutes per side until golden brown.
- Transfer to a paper towel-lined tray. Sprinkle with kosher salt.
- Serve hot with your favorite dipping sauce.
Notes
- Use sweet onions like Vidalia for a milder taste.
- For extra crispness, fry in small batches without crowding.
- Let panko-coated rings sit for a few minutes before frying to help set coating.
- Reheat in oven to restore crispness—avoid microwave.
