Ingredients
3 egg yolks
100 g granulated sugar
16 g vanilla sugar
60 g cornstarch
75 ml milk (for mixing with cornstarch)
600 ml milk (for heating)
Instructions
- Prepare the Egg Mixture: Place the egg yolks, granulated sugar, and vanilla sugar in a deep bowl. Whisk for about 1 minute until the mixture is light and airy. Add cornstarch and 75 ml milk and mix until smooth.
- Heat the Milk: In a saucepan, bring the remaining 600 ml of milk to a boil. Remove it from the heat once it starts boiling.
- Combine the Mixtures: Slowly add the hot milk to the egg mixture while stirring continuously to avoid curdling.
- Cook the Custard: Pour the combined mixture back into the saucepan over medium heat. Stir constantly until the custard thickens and coats the back of a spoon. Remove from heat.
- Cool the Custard: Cover the custard with cling film directly on the surface to avoid a skin forming. Let it cool to room temperature or store in the fridge for later use.
