Hobo Casserole is a hearty, all-in-one bake featuring seasoned ground beef, thinly sliced potatoes, and layers of cheddar and Parmesan cheese. Baked until golden and bubbly, it’s a simple yet delicious comfort dish ideal for weeknights or cozy dinners.
Ingredients
1 lb ground beef
4 medium potatoes, thinly sliced
1 tbsp olive oil
1 medium onion, chopped
2 garlic cloves, minced
1/2 cup beef broth
1/4 cup milk (optional)
1 tsp Italian seasoning
1/2 tsp paprika
Salt and pepper to taste
1 cup shredded cheddar cheese
1/2 cup grated Parmesan cheese
Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 375°F (190°C). Slice potatoes to 1/4-inch thickness.
- In a skillet, heat olive oil. Sauté onions and garlic until fragrant. Add ground beef, Italian seasoning, paprika, salt, and pepper. Cook until browned.
- Grease a baking dish. Layer half the potatoes, half the beef mixture, and half the cheddar. Repeat layers.
- Pour beef broth and milk evenly over the top. Cover with foil and bake for 35–40 minutes.
- Uncover, sprinkle with Parmesan, and bake for an additional 10 minutes until golden and bubbly.
- Let rest for 5 minutes. Garnish with fresh parsley before serving.

- Use heavy cream instead of milk for extra richness.
- Add sliced bell peppers, mushrooms, or spinach for extra nutrition.
- Swap ground beef for turkey or chicken for a lighter version.
- To freeze, assemble without cheese and add cheese just before baking.
