Description

Hobo Casserole is a hearty, all-in-one bake featuring seasoned ground beef, thinly sliced potatoes, and layers of cheddar and Parmesan cheese. Baked until golden and bubbly, it’s a simple yet delicious comfort dish ideal for weeknights or cozy dinners.


Ingredients

1 lb ground beef

4 medium potatoes, thinly sliced

1 tbsp olive oil

1 medium onion, chopped

2 garlic cloves, minced

1/2 cup beef broth

1/4 cup milk (optional)

1 tsp Italian seasoning

1/2 tsp paprika

Salt and pepper to taste

1 cup shredded cheddar cheese

1/2 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)


Instructions

  1. Preheat oven to 375°F (190°C). Slice potatoes to 1/4-inch thickness.
  2. In a skillet, heat olive oil. Sauté onions and garlic until fragrant. Add ground beef, Italian seasoning, paprika, salt, and pepper. Cook until browned.
  3. Grease a baking dish. Layer half the potatoes, half the beef mixture, and half the cheddar. Repeat layers.
  4. Pour beef broth and milk evenly over the top. Cover with foil and bake for 35–40 minutes.
  5. Uncover, sprinkle with Parmesan, and bake for an additional 10 minutes until golden and bubbly.
  6. Let rest for 5 minutes. Garnish with fresh parsley before serving.
