Description

Hillbilly Cole Slaw is a tangy and crunchy cabbage salad that marinates overnight for maximum flavor. Combining fresh chopped cabbage, carrots, bell pepper, onions, and a zesty vinegar-based dressing, this Southern-inspired slaw is perfect as a refreshing side dish for barbecues, picnics, or casual family meals.

Ingredients

Vegetables

  • 2 1/2 lb head green cabbage (about 6 cups chopped, core removed)
  • 3 medium carrots (peeled and grated)
  • 1 small green bell pepper (seeded and chopped)
  • 1 small red onion (diced small)
  • 3 green onions (chopped)

Seasonings

  • 1 tsp garlic salt
  • 1 tsp celery seeds
  • 1/2 tsp lemon pepper

Dressing

  • 3/4 cup white distilled vinegar
  • 3/4 cup vegetable oil
  • 3/4 cup granulated sugar

Instructions

  1. Prepare the vegetables: Remove the core from the green cabbage and chop it into bite-sized pieces, measuring about 6 cups. Peel and grate the carrots. Seed and chop the green bell pepper. Dice the red onion finely and chop the green onions. Layer all these vegetables evenly in a shallow glass or ceramic dish.
  2. Add seasoning: Sprinkle the garlic salt, celery seeds, and lemon pepper evenly over the layered vegetables to distribute the flavors thoroughly.
  3. Make the dressing: In a small saucepan on the stovetop, combine the white distilled vinegar, vegetable oil, and granulated sugar. Bring this mixture to a boil, then remove it from the heat and stir until all the sugar has dissolved completely.
  4. Combine and marinate: Immediately pour the hot vinegar dressing evenly over the seasoned vegetables in the dish. Cover the dish and refrigerate it for 24 hours to allow the flavors to meld and the slaw to develop its signature tangy taste.
  5. Serve and store: Before serving, stir the coleslaw well to evenly distribute the dressing and vegetables. Store any leftovers in an airtight container in the refrigerator for up to one week.

Notes

  • For best flavor, allow the cole slaw to marinate the full 24 hours before serving.
  • You can adjust the sugar quantity in the dressing according to your preferred sweetness level.
  • This recipe is perfect as a side dish for grilled meats, sandwiches, or picnic meals.
  • Use a glass or ceramic dish to avoid any reaction with the acidic vinegar dressing.
  • Keep refrigerated in an airtight container to maintain freshness up to a week.
