Description

A savory tart with a flaky puff pastry base, layered with basil pesto, sharp cheddar, and heirloom tomatoes, topped with homemade everything bagel spice.


Ingredients

1 sheet frozen puff pastry, thawed

1/3 cup basil pesto

1 1/2 cups shredded sharp cheddar cheese

46 heirloom tomatoes, sliced

Extra virgin olive oil, for drizzling

Fresh basil, for garnish (optional)

2 tablespoons toasted white sesame seeds

1 tablespoon toasted black sesame seeds

2 tablespoons poppy seeds

2 teaspoons onion powder

2 teaspoons garlic powder

2 teaspoons kosher salt


Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Place puff pastry sheet on the baking sheet and prick all over with a fork.
  3. Spread pesto over pastry, leaving a 1/4-inch border.
  4. Sprinkle with shredded cheddar cheese.
  5. Bake for 25–30 minutes until golden and bubbling.
  6. Remove and top with heirloom tomato slices.
  7. Drizzle with olive oil and sprinkle everything bagel spice.
  8. Garnish with fresh basil if desired. Slice and serve.
  9. To make everything bagel spice: Mix all listed spice ingredients in a bowl and store.

Notes

  • Swap pesto with sun-dried tomato or arugula pesto.
  • Use mozzarella or Gruyère instead of cheddar.
  • Add ricotta before baking for creaminess.
