Description
A savory tart with a flaky puff pastry base, layered with basil pesto, sharp cheddar, and heirloom tomatoes, topped with homemade everything bagel spice.
Ingredients
1 sheet frozen puff pastry, thawed
1/3 cup basil pesto
1 1/2 cups shredded sharp cheddar cheese
4–6 heirloom tomatoes, sliced
Extra virgin olive oil, for drizzling
Fresh basil, for garnish (optional)
2 tablespoons toasted white sesame seeds
1 tablespoon toasted black sesame seeds
2 tablespoons poppy seeds
2 teaspoons onion powder
2 teaspoons garlic powder
2 teaspoons kosher salt
Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Place puff pastry sheet on the baking sheet and prick all over with a fork.
- Spread pesto over pastry, leaving a 1/4-inch border.
- Sprinkle with shredded cheddar cheese.
- Bake for 25–30 minutes until golden and bubbling.
- Remove and top with heirloom tomato slices.
- Drizzle with olive oil and sprinkle everything bagel spice.
- Garnish with fresh basil if desired. Slice and serve.
- To make everything bagel spice: Mix all listed spice ingredients in a bowl and store.
Notes
- Swap pesto with sun-dried tomato or arugula pesto.
- Use mozzarella or Gruyère instead of cheddar.
- Add ricotta before baking for creaminess.
- Layer in caramelized onions or roasted peppers.
- Use zucchini or eggplant in place of tomatoes.
