Description
Delicious and easy 3-ingredient Hash Brown Egg Nests perfect for breakfast or brunch. Crispy homemade hash brown nests filled with flavorful baked eggs and melted cheese, garnished with parsley for a delightful morning treat.
Ingredients
Hash Brown Nests
- 2 medium russet potatoes (about 2 cups shredded)
- Salt and pepper, to taste
- Cooking spray
Egg Filling
- 4-6 eggs
- Salt and pepper, to taste
- 1/2 cup shredded cheese
Garnish
- Parsley for serving
Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C) and generously grease a 6-cup muffin pan with cooking spray to prevent sticking.
- Prepare the Potatoes: Peel the russet potatoes and grate them using a large box grater. Transfer the grated potatoes to a colander and rinse under cold water until the water runs clear to remove excess starch. Thoroughly dry the grated potatoes with paper towels to ensure they crisp up when baked.
- Form the Hash Brown Nests: Evenly divide the dried shredded potatoes among the muffin cups. Pack them tightly with your fingers or press down with a small measuring cup to form nest shapes. Season each nest with salt and pepper, then spray the nests again lightly with cooking spray for a golden finish.
- Bake the Nests: Place the muffin pan in the oven and bake the nests for 15 to 20 minutes until they turn golden and the edges begin to brown.
- Prepare the Egg Mixture: While the nests bake, whisk together 4 to 6 eggs in a bowl and season with salt and pepper. Add any additional desired toppings into the egg mixture if preferred.
- Add Eggs and Cheese: Remove the nests from the oven, carefully divide the whisked eggs among the six nests, filling each cavity. Sprinkle shredded cheese evenly on top of each egg-filled nest.
- Bake Again: Return the muffin pan to the oven and bake for an additional 12 to 15 minutes or until the egg whites are fully set and cooked through.
- Cool and Serve: Allow the Hash Brown Egg Nests to cool for 5 minutes before removing them from the muffin pan. Garnish with fresh parsley and serve warm for a delightful breakfast or brunch.
Notes
- Ensure potatoes are thoroughly dried after rinsing to avoid soggy nests.
- Use fresh eggs for best flavor and texture.
- Customize nests by adding herbs or cooked bacon to the egg mixture before baking.
- For crispier nests, bake a bit longer but monitor closely to prevent burning.
- These nests can be made ahead and reheated in the oven for convenience.
