Ingredients

Sweet Potatoes

  • 1 pound sweet potatoes, cut into cubes

Harissa Seasoning

  • 2 tablespoons harissa paste
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon maple syrup, divided in half

Tahini Maple Sauce

  • 1/4 cup tahini
  • Remaining 1/2 tablespoon maple syrup (from above)
  • Optional: 2-4 tablespoons water for thinning sauce


Instructions

  1. Preheat & Prep: Preheat the oven to 400 degrees Fahrenheit and line a baking sheet with foil or parchment paper. Place the cubed sweet potatoes into a large mixing bowl.
  2. Season Sweet Potatoes: In a small bowl, whisk together the harissa paste, olive oil, 1/2 tablespoon maple syrup, salt, and black pepper. Pour this mixture over the sweet potato cubes and toss thoroughly to ensure all pieces are evenly coated with the spicy marinade.
  3. Roast Sweet Potatoes: Spread the coated sweet potatoes evenly on the prepared baking sheet. Roast in the preheated oven for 25 to 30 minutes, stirring halfway through the cooking time. Look for the potatoes to be tender when pierced with a fork and have lightly crisped, golden edges.
  4. Make Tahini Maple Sauce: While the sweet potatoes are roasting, combine the tahini and the remaining 1/2 tablespoon maple syrup in a small bowl. Whisk until smooth. If desired, add 2 to 4 tablespoons of water to thin the sauce to your preferred consistency.
